Acquire traditional Japanese culinary skills through a short-term apprenticeship program in Japan. Learn from renowned chefs in an intimate setting, and engage in an important part of Japanese culture. Apply using the link at the bottom of this page.　

 

fOR WHO

A program for those who are serious about improving their culinary skills and those who wish to understand Japanese cuisine at a deeper level. This program is also perfect for chefs trained to prepare a different cuisine who wish to expand their skill-set and learn how to properly prepare Japanese cuisine. Applicants should have previous experience working as a culinary professional, and do not need to speak Japanese.

FOR WHAT

Go beyond mastering the fundamental skills and discipline of being a Japanese culinary professional. Gain the complete understanding of what it means to serve and prepare Japanese cuisine, and become involved with the entire process. Acquire skills and experience only attainable through working first-hand with a master chef in an intimate setting, such as procuring ingredients and communicating with customers.

Become an apprentice at the top restaurants in Japan.

Learn how to properly prepare Japanese cuisine where it originated, and understand not only how to prepare them, but also the daily life of a Japanese chef.

  • Learn traditional, proper, authentic cooking processes and techniques

  • Learn beyond the restaurant, everything from how to pick the ingredients to stock, to selecting the dishes for serving

  • Interact with market wholesalers, customers, and other renowned chefs

  • Immediately start learning the works of a chef, unlike traditional apprenticeships which start from cleaning and dish washing

 

Programs

 

Upon request, we will connect you with a chef specialized in your cuisine of interest.

  • Duration: 2-6 months (start and end date will be negotiated with the chef)

  • Apprentices are expected to work full-time and to fully engage with all aspects of the dish-making process

In addition, we will provide 

  • Uniform of the restaurant of your apprenticeship

  • Travel and lodging arrangements

  • Interpreter

  • Upon request, other support services that are necessary for your stay in Japan

 

Application

 

The process to become an apprentice is as follows.

  1. Submit application form (below)

  2. Screening of application

  3. Skype interview(s)

  4. Matching with host restaurant 

  5. Arrangement of necessary transportation, accommodation, interpreter etc. 

  6. Arrive in Japan and begin your apprenticeship
